Instructions

**Citrus Snowskin Dough**
1. Combine all the dry ingredients in a large microwaveable bowl and whisk to combine. Zest the citrus fruits and add them into the mix.
2. Combine all the wet ingredients in a small bowl.
3. Then stir in the wet ingredients into the dry ingredients.
4. Microwave the batter for about 1 minute and give it a good mix.
5. Microwave for another 1 to 1 and a half minutes until the batter is thoroughly cooked and opaque.
6. Cling wrap the dough and leave it to cool at room temperature.

**Yuzu Filling**
1. Combine both ingredients in a small bowl.
2. Portion and weigh out 20 gm for each mooncake and roll into a small ball.

**Assembly**
1. Portion out the Snowskin, weigh out 20 gm per mooncake.
2. Roll the Snowskin dough into a small ball then roll it flat with a rolling pin.
3. Place the mooncake paste in the middle of the rolled dough.
4. Pinch the sides of the dough to the middle and roll it into a ball.
5. Dust the mooncake mould with a bit of cornstarch and place the dough into the mould.
6. Stamp it lightly and tap the mooncake out.
