Ingredients

• Gluten Free All Purpose Baking Flour | - | 3 1/3 cups (453 g)
• Xanthan Gum | - | 3 1/2 tsp (10.5 g)
• Non-Fat Dry Milk Powder | - | 1/2 cup (76 g)
• Brown Sugar, lightly packed | 1405 | 1/2 cup (76 g)
• Instant Yeast | 12294 | 2 1/4 tsp
• Salt | - | 1 tsp
• Water, warm (about 110°F) | - | 1 1/2 cups + 2 tbsp (390 mL)
• Oil | - | 1/4 cup (60 mL)
• Eggs, large | - | 2 (100 g)

Instructions

1. Grease a 9 x 5-inch bread pan. Combine all the dry ingredients including yeast in a large bowl.
2. In another bowl, combine the 1 1/2 cups plus 2 tablespoons water, oil and eggs.
3. Add the liquid ingredients to the dry ingredients and mix well.
4. Beat the batter until smooth (can also be done with a mixer).
5. Pour batter into bread pan and smooth out top.
6. Cover the loaf with plastic or a clean dish towel and let rise about an hour or until the batter is slightly above the rim of the pan. Meanwhile, preheat oven to 375°F.
7. Bake for 40-50 minutes or until internal temperature reaches 190-200°F. Cover with foil after 25 minutes if the crust is beginning to brown noticeably.
8. Cool briefly (5 minutes); remove from pan and cool thoroughly on a rack.
